Best of Zucchini

Summer time is here with gardens exploding with zucchini. Such a versatile squash it can be an appetizer, a side dish or a main course. 

In a pasta, a pizza , in bread and even in brownies! try them all you will not be disappointed. The recipes are endless .

Below are some great ideas of what to do with all that zucchini.

Zucchini Lasagna

Cut up a zucchini on a mandolin either in rounds or length wise.  Also on the mandolin slice up an onion , green pepper . Add a layer of tomato sauce them alternate zucchini, onion, green pepper, grated raw mozzarella cheese.  On the final layer of zucchini Cut up a zucchini on a mandolin either in rounds or length wise.  Also on the mandolin slice up an onion , green pepper . Zucchini Pizza

Slice up a Zucchini in rounds, this one was as very big from Williams Orchards, otherwise slice lengthwise. Add olive oil and salt and bake at 375 F for 30 at minutes , remove from oven and add tomato sauce, raw gruyere cheese, mushrooms and bake for 15 more minutes. Top with fresh micro greens.

Black Bean Zucchini Cupcakes

This recipe  can be found on my  Organic Black Bean Brownies  page. The only change would be to add 1/2 cup of grated Zucchini to the recipe.

Parmesan Baked zucchini

Crispy tender zucchini sticks featured here with roast carrots, endive, green onions and chick peas burgers.

Quarter 2 small zucchini lengthwise toss in some olive oil, salt and pepper and bake in a preheat 375F oven for 15 to 18 minutes until golden. 

Flatbread Zucchini Pizza

Yummy flat bread pizza. For the crust see Organic Cheese Bread Pizza Crust.

For the crust use a brownie pan ( like this ) and spread dough out evenly and bake  according to instructions. Remove from oven and add tomato sauce , raw grated Mozzarella , thinly sliced Zucchini  and bake another 15 minutes at 375F. remove from oven and add black olives, fresh basil .

Serves 4.

Fermented Zucchini

If you have a lot of zucchini fermenting it is the perfect way to preserve your harvest.

Use an mandolin to slice thinly.

The recipe is the same as my Organic Fermented Cucumbers.

You can add garlic,turmeric or ginger to taste if you wish. Whenever fermenting use organic ingredients.
