Delicious organic black forest pound cake made ( yes really !) with chickpeas. Unbelievably moist ! No one will guess that it is totally grain and gluten free.
Just add all the ingredients to a blender or food processor ( not the chopped cherries and dark chocolate, they are mixed in by hand at the end) And voila a fantastic dessert suitable for any occasion.
Serve with a huge dollop of freshly made organic whipped cream or a coconut whipped cream.
Top with chopped cherries and dark chocolate before baking.
Switch it up bit and replace the chick peas with black beans and add 1/2 cup of grated zucchini .
Makes 12 muffins . Bake for 30 minutes and enjoy!
