Danish red cabbage known as “Rødkål” is a traditional dish served on Christmas Eve with a roast duck or a crackling roast pork. At our home we always have roast duck.
It is also served with Danish meatballs called “Frikadeller” or pork chops or farmer’s sausage called “Medisterpølse”
The recipe is very simple and everyone has their own unique twists on it and below is mine.
1 medium sized head of organic red cabbage
3/4 cup organic apple cider vinegar
1/2 cup organic maple syrup
2 tbsp. black current jelly
2 tbsp. organic grass fed butter
Quarter and remove white core & finely cut red cabbage on a mandolin
In a large saucepan over medium high heat add butter, salt and pepper to taste and gently sauté red cabbage for several minutes.
Add apple cider vinegar and maple syrup and reduce to a simmer.
Allow to cook for around 1 hour or until tender.
Add black current and serve hot.
