Danish red cabbage known as Rødkål is a traditional dish served on Christmas Eve with a roast duck or a crackling roast pork. At our home we always have roast duck. 

It is also served with Danish meatballs called Frikadeller.

The recipe is very simple and everyone has there own unique twists on it and below is mine.


1 medium organic red cabbage

3/4 cup organic apple cider vinegar

1/2 cup organic maple syrup

2 tbsp. black current jelly

2 tbsp. organic grass fed butter

 Quarter and remove white core  &finely cut red cabbage on a mandolin

In a large saucepan over medium high heat add butter and gently sauté  red cabbage for several minutes.

Add apple cider vinegar and maple syrup and reduce to simmer.

Allow to cook for around 1 hour or until tender.

Add in black current and serve hot.
