This is a Danish open sandwich that can easily be assembled and served with a cold beer and ice cold aquavit, It is one of the more popular Scandinavian traditional and timeless lunch dishes .

The shrimp should be small Atlantic cold water ( frozen never canned) unless you are lucky enough to find the tiny North Sea shrimp. Use organic eggs.
